As for any harvest, finding the right equilibrium between sugar concentration, acidity, but also health of the vines, is the key to a successful production. Limited sun and temperatures for summer 2021 have considerably delayed the harvesting season compared to a year earlier where the photosynthesis machinery was running full speed. Well that’s where Vouvray diversity and expertise to valorise vintages enters into play: 2021 may likely be a year for the production of more Traditional Method and less Mellow wine, but in any case, a vintage we won’t forget and look forward to taste!
